Olive and chickpeas flatbread


This easy to make recipe is a great option for those who are following a gluten free or vegetarian lifestyle. It is perfect for dipping and dunking into soups, inspired from the Italian cuisine.


*** What do we need?

* 200 gr chickpeas flour (2 cups)

* 6 gr sea salt/ 1 teaspoon

* 2 gr black pepper/ 1/2 teaspoon

* 590 ml warm water (2 1/2 cups)

* 45 ml extra virgin oil oil (3 tablespoons)

* 75 gr green olives, chopped (1/2 cup)

* 75 gr black olives, chopped (1/2 cup)

* 6 gr fresh chives, chopped (2 tablespoons)



*** How do we prepare it?

👉🏻 Mix the chickpea flour with the salt and pepper in a large bowl. Slowly, add the warm water, continuing to stir until you get a smooth, thin, lump-free batter.

👉🏻 Leave it rest for 15 minutes at room temperature.

👉🏻Preheat oven to 205 degrees and drizzle with olive oil a 12-inch round pizza pan. Place the pan in the preheated oven for 2-3 minutes.

👉🏻Remove the hot pan from the oven and pour in the batter. Add the olives on top of the batter in a single, even layer.

👉🏻Transfer the pan back to the oven and bake until the flatbread is set and golden brown, about 20 minutes.

👉🏻Remove from the oven and sprinkle with chives. Cut into 8 wedges and serve!
